Raw Coconut Macaroons

These raw coconut macaroons are a go to treat for me - I love them! They are vegan, dairy-free, grain-free and processed sugar-free. Coconut, coconut oil and coconut sugar are all used, but you can sub the coconut sugar with your favorite sweetener. This recipe makes 12 macaroons. I use the dehydrator to get a really crispy outside, but you don’t have to! You can just set them in the refrigerator.
Raw Coconut Macaroons
Ingredients:
- 1 cup coconut, shredded
- 1/3 cup coconut sugar
- 1/4 cup coconut oil
- 1/3 cup almond butter
- 1 teaspoon maca powder
- 1/4 teaspoon sea salt
Directions:
- In a bowl, mix the coconut, coconut sugar, coconut oil, almond butter, maca and sea salt.
- Use your hands to mix it up really well! It should look like cookie dough. If it’s not thick enough, add a little more almond butter.
- Once the dough is the right consistency, roll into balls. Sit on dehydrator sheets (optional) and dehydrate at 105 for at least 5 hours.
