Blueberry Walnut Pancakes
Ingredients
- 3/4 cup brown rice flour
- 1/4 cup almond meal flour
- 3 tsp. baking powder
- 1/4 tsp. salt
- 2 tbsp. hemp hearts
- 1 tsp. ground cinnamon
- 2 medium bananas
- 2 tbsp. almond butter or peanut butter
- 3/4 cup almond milk
- 1 tbsp. olive oil
- 1 tsp. vanilla
- 1/2 cup blueberries
- 1/4 cup chopped walnuts
Directions
- In a mixing bowl, whisk together the dry ingredients.
- In a food processor, whip together the almond butter and bananas.
- In a second bowl, whisk together all the wet ingredients.
- Combine the dry ingredients into the wet ingredients while heating a pan to medium temperature. Gently fold in blueberries and walnuts. Cook pancakes on both sides until golden.
- Serve with syrup or fresh sliced fruit. Makes 10–12 medium pancakes.
